Food Poisoning Outbreak Investigation

Health officials said they tested 69 environmental samples — but all came back negative for Salmonella. The outbreak investigation is ongoing. The source is still unknown. In the meantime, the health department is working with the Arizona Department of Corrections to prevent the spread of Salmonella.

What is the Problem?

Food poisoning outbreaks at prisons can be severe. Inmates can’t choose what food they are going to eat, so the prison staff are responsible for ensuring that the food is not contaminated. When outbreaks occur, it is common for large numbers of inmates to fall ill.

Salmonella Food Poisoning

Salmonella is a bacteria that commonly causes food poisoning illnesses in people. For most people, symptoms of an infection begin within 1-3 days of eating contaminated food. These symptoms may include diarrhea, fever, and abdominal cramps. In severe cases, infections lead to long-term joint pain known as reactive arthritis.
